Pesto & Goat Cheese Pasta

This week has
been such a whirlwind with our fur baby in the hospital. Realizing late last
night how overdue for a trip to the Harris Teeter I was, I decided to throw
some random ingredients together for dinner. So, I present to you,
Pesto & Goat Cheese Pasta!

I was pleasantly surprised with how quickly I whipped this together. Oh, and it was delicious.

First, I sauteed baby portabella mushrooms with onions and garlic in butter, until tender.

Then I dumped half of a container of goat cheese and pesto on top! Okay, fine, I dumped the whole container of goat cheese on top, oops.

After a few minutes, I had a deliciously creamy mixture that I poured on top of whole wheat pasta. I sprinkled fresh parsley on top for color and voila…

This pasta looks absolutely amazing! I love how the goat cheese makes a creamy sauce. I'm going to have to try this... soon!

Fantastic recipe, and your photos made me want to lick my laptop screen! I love meals that use lots of mushrooms -- they're so packed with micronutrients, and a great substitute for meat. Thanks for sharing, and for helping me decide what I'll be making for dinner this week!
