Black Bean Chili

During the chilly months, nothing is quite as satisfying as sitting down to a huge bowl of hearty {vegan} chili! I usually make my chili in large batches and freeze it for nights I am too busy to cook. With each batch I try and get a little creative by adding a new ingredient. For my most recent "husband approved" batch I added a little Mexican flair by incorporating a ranch packet and avocado...

Black Bean Chili 
Adapted from The Endless Meal

1 onion, diced
1 green pepper, diced
4-5 cloves garlic, minced
1 cup salsa
1 28 oz can sliced stewed tomatoes
2 cans black beans
1 can chili beans
3 cups fresh or frozen corn kernels
1 avocado, diced
1 packet chili seasoning
1 packet dry ranch mix {optional}
A squeeze of lime juice
Mozzarella cheese, grated

Heat oil in a large pot over medium high heat. Add onion and cook for 2 minutes. Add garlic and cook for 1 minute. Add green pepper and cook 2 more minutes.

Add salsa, tomatoes, chili beans and black beans and bring to a boil. Add chili and ranch packets {if using}. Reduce heat and simmer for 10 minutes.

Add corn and return to a boil. Reduce heat and simmer for 5 more minutes or more {the longer it simmers, the better}!

Season to taste with salt and pepper.

Gently toss the avocado in lime juice.

Pour chili in bowls and top with cheese {if you're vegan cheating} and avocado.

I am pretty sure this is my favorite chili variation yet! See, vegan can be delicious {just don't add the cheese}!
