The Best Damn Chili

This is the best damn chili recipe loaded with two types of meat, beans, and a few twists (enchilada sauce & maple syrup)!

Ingredients

  • 1lb ground beef
  • 1 lb ground pork
  • 1 large sweet onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 1 (15 oz) can red kidney beans, drained
  • 1 (15 oz) can chili beans, drained
  • 1 (28 oz) can petite diced tomatoes
  • 1 (10 oz) can red enchilada sauce
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 2 tablespoons cumin
  • 1 tablespoons oregano
  • 1/4 cup maple syrup
  • 1 teaspoon salt (more to taste)
  • toppings: cilantro, green onions, cheddar cheese, avocado, sour cream

Instructions

1. In a dutch oven brown the beef and pork until meat is cooked through (about 8-10 minutes). Drain off the fat. Add the onions, peppers, and garlic and saute until vegetables are soft (about 5 minutes). Season with salt and pepper.

2. Add the remaining ingredients and bring to a boil. Reduce heat and simmer for 1 - 8 hours (the longer the better), stirring every 20 minutes or so!

CROCKPOT DIRECTIONS

1. In your crockpot or skillet, brown the beef and pork until meat is cooked through (about 8-10 minutes). Drain off the fat. Add the onions, peppers, and garlic and saute until vegetables are soft (about 5 minutes). Season with salt and pepper.

2. Transfer the meat mixture to crockpot and add remaining ingredients.

3. Cook on high for 4 hours or low for 8 hours, string every 20 minutes or so.

Just had to tell you, I pinned this recipe when you posted it back in October, and I finally made it yesterday. OMG soooo good! It was my first time ever making chili and I'm so glad I used this recipe, it was delicious. Thanks for sharing it!

So I keep forgetting to tell you that I made this chili the night before Halloween for my little pumpkin carving ceremony. It was quite delicious! I didn't see that 2 alarm chili starter thing at HT so I googled it and found this recipe which is apparently the quantity of all the spices that is in the kit. http://www.food.com/recipe/2-alarm-chili-39280Thought it may be helpful for if you ever don't have a hit on hand.
