Lasagna Soup

We kicked off 2022 Soup Sunday with one of our favorites — Lasagna Soup!

From the 2014 archives, this is the recipe that made me prefer my lasagna in soup form. It’s hearty, easy to make, and perfect for those chilly nights ahead. And since we’ve been making it every season for the past 8 years, I thought it was time to give this post a little refresh.

I also need to mention that this is a kid-approved soup and is one of the first requests for Soup Sunday season.

Loaded with beef, pasta noodles, tomatoes, and fresh herbs, this soup is packed with flavorful ingredients — and topped with a delicious ricotta cheese mixture. Please don’t let the long list of ingredients fool you, this soup is super easy to make in 20 minutes or less. And if you’re a Walmart shopper, you can find these ingredients available in the Great Value or Marketside brand. Lasagna Soup Freezer Instructions

If you are planning to freeze this soup, do NOT add the ricotta cheese! Pour soup into freezer-safe containers and freeze for up to 3 months. To thaw, place soup container in fridge overnight. If you are planning to freeze a large batch of this soup, I wouldn’t add the noodles to it when you first make it. Instead, add the noodles to the re-heated batch so they taste fresh.

The dish that made me start preferring my lasagna in soup form!

Ingredients

  • 8 ounces pasta (I like elbows or rotini noodles)
  • 1 tablespoon olive oil   
  • 1 pound ground beef or Italian sausage
  • 3 cloves garlic, minced   
  • 1 sweet onion, diced   
  • 2 teaspoons fresh oregano, chopped
  • 1/2 teaspoon crushed red pepper flakes   
  • 3 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28-ounce) can fire roasted diced tomatoes   
  • 2 bay leaves   
  • Kosher salt and freshly ground black pepper, to taste   
  • 1/4 cup fresh basil leaves, chopped

For the Ricotta Mixture

  • 8 ounces ricotta   
  • 1/2 cup grated Parmesan   
  • Kosher salt and freshly ground black pepper, to taste

Instructions

    In a small bowl, mix together ricotta, and Parmesan. Season with salt and pepper and set aside.

    In a separate pot, cook pasta according to package instructions; drain well and drizzle with olive oil so the pasta doesn't stick together.

    In a large dutch oven or pot, heat olive oil add meat to the skillet and cook until browned, about 3-5 minutes. Make sure to break up the meat into smaller pieces as it cooks. Drain fat.

    Add in garlic, onion, oregano, and red pepper flakes. Cook, stirring frequently, until onions are soft, about 2-3 minutes.

    Stir in tomato paste and mix well.

    Stir in chicken stock, diced tomatoes, and bay leaves. Season with salt and pepper.

    Bring soup to a boil then reduce heat and simmer about 30 minutes.

    Stir in pasta and basil.

    Serve immediately with a heaping spoonful of the ricotta mixture. Garnish with parsley or chopped basil.

Can you make this soup vegetarian or vegan?

YES! You can omit the meat and cheese, and add some additional fresh veggies like zucchini and squash.

Can I use a different pasta noodle?

Yep! We like the shape of rotini noodles, but you can use whatever noodle you want — broke lasagna noodles, elbows, bow tie pasta, etc.
