Last night we celebrated Kristen’s birthday. She loves red velvet cake so I offered to whip up some cupcakes for her birthday dinner. While I was at it, I decided to experiment a little bit with my standard cream cheese frosting recipe and wound up with an award-winning frosting. It hasn’t technically won an award yet, but I can assure you that it could!
Whipped Cream Cheese Frosting
2 8oz. packages cream cheese, room temperature
2 sticks unsalted butter, room temperature
1 tsp vanilla extract
4 cups powdered sugar
2 tbsp heavy cream
pinch of salt
a mixer, combine your cream cheese and butter. Sift in the sugar, and continue mixing. Stir in
vanilla and mix until smooth. Pour in your whipping cream, add salt and mix on
high until fluffy.
Yields: 4 cups (easily halved or quartered)
