REMINDER: The After-School Restraint Collapse

Sharing about the “after-school restraint collapse” again for mamas with Kindergartners (or kids starting daycare or ANY new grade) in case any of you experience this with your kid(s) and are wondering what in the heck is happening a few weeks or months into the new school year.

A few months into Kindergarten, Caroline began coming home highly emotional and would easily explode into tears over little things like putting on a jacket, doing her homework (which she loves), learning what’s for dinner, taking a bath, etc. This behavior was so uncharacteristic for her and Matt and I were desperate to figure out what our sweet girl was going through. No matter how much sleep she got she would arrive home absolutely exhausted and would crumble on a dime into a million pieces for absolutely no reason.

Finally, we had a breakthrough when another mama shared the “after-school restrain collapse” with me.

Between surgeries, babies, and bereavement, over the years we have been on the receiving end of many meals. Our friends have hugged us with enchiladas when we couldn’t even think about cooking — and for that, I am forever grateful.

GRILLED PEACH & BURRATA SALAD

Ingredients
▫️3 large peaches, sliced thick
▫️5 tablespoons olive oil, divided
▫️3 tablespoons balsamic vinegar
▫️4 ounces prosciutto, torn into bite-size pieces
▫️8 ounces burrata cheese, cut into small pieces
▫️5 cups arugula or spring mix
▫️8-10 large basil leaves, torn or sliced thin
▫️salt & pepper

Instructions
1. Heat your grill to medium heat.

2. Drizzle half the olive oil over the peaches. Grill peaches for 4-5 minutes on each side or until the peaches are fork tender.

3. Remove the peaches from the grill and set aside while you assemble the salad.

4. On a large platter, add the arugula or spring mix. Top with prosciutto and burrata cheese. Spinkle basil over the salad.

5. In a salad shaker, combine remaining olive oil and balsamic vinegar and shake well. Drizzle over salad and season with salt and pepper. Serve immediately.
