Happy October 1st! Today we’re kicking off a twist on one of our favorite fall traditions — SLOW COOK SUNDAY!

If you’ve been following along for awhile, you know I’ve done Soup Sunday for years during the cooler months, but y’all are loving crockpot recipes so I thought it would be more fun to expand my recipes beyond soups this year.

For our first Slow Cook Sunday, I’m sharing one of our favorite —Crock Pot Tuscan Chicken (Dairy-Free, Gluten-Free)! I hope y’all love it!

By popular request, a suuuuuper simple weeknight crockpot meal – Italian Chicken Sandwiches!

In a crockpot, add:
2 lbs chicken breast
1 tsp garlic powder + salt and pepper
15 oz can petite diced tomatoes (drained)
1.5 cups Italian dressing

Slow cook on low for 6 hours. Remove chicken and shred. Save the tomato juice mixture!

Assemble sandwiches:
On a bun, add sliced provolone cheese (and toast for a few minutes to get it nice and melted). Pile on a generous amount of shredded chicken. Sprinkle basil over chicken (optional) and finish with a spoonful of tomato juice mixture from crockpot.

Two Ingredient Pumpkin Bread

1️⃣ Spice Cake Mix: You are using JUST the mix! Do not add the additional ingredients listed on the back of the box. You will also use the cook times on the back of the box depending on what sort of shape you’re baking in (muffins, cake, bread loaf, etc.).

*Gluten-Free: If you are looking for a gluten-free cake mix option, I recommend Namaste Foods Gluten Free Spice Cake Mix.

2️⃣ Pure Pumpkin: Make sure you are getting 100% pure pumpkin! And the 15 oz size.

You can add so many fun things to this bread — chocolate chips, raisins, pecans, cinnamon chips, etc.!
