Apple Cider Donuts

Remember this Apple Cider Mini Muffins I made last fall? Well, I used the recipe again...this time for donuts!
Apple Cider Donuts
Adapted from theKitchn

Muffin Ingredients
2 cups flour
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
½ teaspoon salt
2 teaspoons cinnamon
2/3 cup brown sugar
1 egg
½ cup apple butter
1 teaspoon vanilla extract
1/3 cup honey
1/3 cup apple cider
1/3 cup plain yogurt
2 tablespoons canola oil

Muffin Topping
4 tablespoons unsalted butter
½ cup sugar
3 tablespoons cinnamon

Preheat oven to 375°F and grease a donut pan.
In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon and brown sugar. In another large bowl, whisk together the egg, apple butter, vanilla extract, honey, apple cider, yogurt and oil. Pour the wet ingredients into the dry ingredient mixture and whisk until blended {don't over-mix}!
Spoon the batter into donut pan until about 3/4 full. Bake for approximately 10 minutes and cool on a wire rack. Meanwhile, melt butter for donut topping in the microwave. In a separate dish, combine ½ cup sugar with 3 tablespoons cinnamon. While donuts are cooling, brush both sides with butter and roll in sugar mixture until coated. Makes about 10-12 donuts.

  6. these sound delish. i had an apple cider donut at a pumpkin patch a few weeks ago and was so made i didn't buy more than one to take home with me, so hopefully these will rival those!!

  7. Ohhh, these look so delicious! I tried making a cider muffin recipe that turned out really delicious, but not exactly what I wanted them to taste like, so I am still looking for something and these look perfect!

  15. I'm about to rent a kitchen just to bake/cook all these glorious recipes you share! Perhaps you should open a bakery or restaurant in CLT?! I have no doubt it'd be a success. Adding this to hundreds of other recipes I've been collecting on the 'must make as soon as I have a kitchen' list. : )
