Two Ingredient Pumpkin Bread

Pumpkin Bread is one of our favorite fall treats, and this pumpkin bread recipe only calls for two ingredients, which makes it even better.

Any recipe that requires minimal effort, no mixer, and only two dirty dishes is an absolute YES in our household. I’ve been making this pumpkin bread since 2013 and not only has it gone viral (more than once), it’s also consistently one of the most popular recipes on my blog.

It’s soft, packed with warm spices, has the perfect crumb, and is so dang good that one loaf never lasts more than a day in our house. I usually go ahead and make two. We love it for breakfast, snack time, dessert – you name it! Sometimes I’ll bake it into mini muffins or jumbo muffins for a fun twist.

Pumpkin Bread Ingredients

  • Spice Cake Mix: You are using JUST the mix! Do not add the additional ingredients listed on the back of the box. You will also use the cook times on the back of the box depending on what sort of shape you’re baking in (muffins, cake, bread loaf, etc.).
  • Gluten-Free: If you are looking for a gluten-free cake mix option, I recommend Namaste Foods Gluten Free Spice Cake Mix.
  • Pure Pumpkin: Make sure you are getting 100% pure pumpkin! And the 15 oz size.
  • Additions: You can add so many fun things to this bread — chocolate chips, raisins, pecans, cinnamon chips, etc.! The possibilities are endless!

You can also make this recipe as jumbo or mini muffins — a great breakfast option! Make sure to adjust the time according to the box directions.

Two Ingredient Pumpkin Bread

This bread is packed with warm fall spices and it's so dang delicious that you'll likely eat the whole loaf in one day! We love this bread for breakfast, snacks, and dessert. We also like to change things up and make mini muffins or jumbo muffins for breakfast.

Ingredients

  • 1 15 oz can Pure Pumpkin
  • 1 box Spice Cake Mix

Instructions

  1. Combine dry cake mix with canned pumpkin in a large bowl. Mix thoroughly {batter will be VERY thick}. Pour into baking pan sprayed with nonstick spray.
  2. Bake at 350 degrees for approximately 40 minutes, or until a knife inserted into the center comes out clean. Refer to cake-mix box for pan size and approximate bake time.
  3. Sprinkle with powdered sugar. Serve warm with {or without} butter.

I add a 1/2 teaspoon of pumpkin pie spice into the mix. It adds a little zip to the bread.

I have been making these muffins for years, but my recipe includes 1/2 cup water. We love them with Cool Whip, tastes like pumpkin pie!!!
