Apple Cider Donuts

Remember this Apple Cider Mini Muffins I made last fall? Well, I used the recipe again…this time for donuts!

Yield: 10-12 donuts

Ingredients

  • 2 cups flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • 2/3 cup brown sugar
  • 1 egg
  • ½ cup apple butter
  • 1 teaspoon vanilla extract
  • 1/3 cup honey
  • 1/3 cup apple cider
  • 1/3 cup plain yogurt
  • 2 tablespoons canola oil

Muffin Topping

  • 4 tablespoons unsalted butter
  • ½ cup sugar
  • 3 tablespoons cinnamon

Instructions

  1. Preheat oven to 375°F and grease a donut pan.
  2. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamonand brown sugar.
  3. In another large bowl, whisk together the egg, apple butter, vanilla extract, honey, apple cider, yogurt and oil.
  4. Pour the wet ingredients into the dry ingredient mixture and whisk until blended {don't over-mix}!
  5. Spoon the batter into donut pan until about 3/4 full. Bake for approximately 10 minutes and cool on a wire rack.
  6. Meanwhile, melt butter for donut topping in the microwave.
  7. In a separate dish, combine ½ cup sugar with 3 tablespoons cinnamon.
  8. While donuts are cooling, brush both sides with butter and roll in sugar mixture until coated.
