Pineapple Lemon Cupcakes {Cream Cheese Frosting}

My newest pregnancy craving is pineapple! I just can't get enough. Dried, fresh or juice, I love it all. This week I took down two whole pineapples on my own, which somewhat worries me because pineapple is also known to naturally induce labor - yikes.
Anyway, I have an easy pineapple dessert for y'all today - Pineapple Lemon Cupcakes!
And it all starts from a box of lemon supreme cake mix! To incorporate the pineapple flavor just substitute pineapple juice in place of water and bake your cake according to the directions. Easy peasy, lemon squeezy!
Cream Cheese Frosting

Ingredients:
- 16 ounces cream cheese (room temp.)
- 2 sticks unsalted butter 
- 2 cups confectioners sugar
-  2 tsp vanilla extract
- 2 tsp heavy whipping cream

Directions:
    In a medium mixing bowl, combine your cream cheese and butter, mixing until incorporated. Sift in the sugar, and continue mixing. Stir in vanilla and mix until smooth. Pour in your whipping cream and mix on high until fluffy. 

Yield: 4 cups (easily halved or quartered)

  1. Yum! I love pineapple, too! One of my favorite desserts is my mom's pineapple chiffon cake {yellow cake mix, vanilla pudding, crushed pineapple & coconut (optional)}. I usually request it in place of a traditional birthday cake. SO good! : )

    I love pinapple too! Don't know if you have one of these but the Pineapple Slicer and Dicer from Williams Sonoma makes it so easy to break down a pinapple. I use mine constantly.

  4. They look so yummy and pretty! When I was preggers I ate so much pineapple too! Well... I ate a lot of fruit in general! ha. :) How fun that you are making yummy treats with your favorite fruits :)

  8. If your'e loving pineapple baked treats lately try this one next. One box of angel food cake and substitute a 15oz can of crushed pineapples for the water. Bake like the directions say and then here's the kicker. Crumble the cake up and place it in layers between whipped cream for a super light, fluffy, springy parfait perfect for someone craving pineapple!

  12. Do not worry about pineapple and inducing labor. Seriously. I was so ready to have my baby and post term I sat down and ate TWO WHOLE PINEAPPLES. I created a tummy ache not a birthing process. And by the way these look simply amazing and will be made today.
