Pulled Pork Salad

This delicious pulled pork salad is the most perfect way to enjoy leftover pork. It’s hearty, filling, and packed with a combination of sweet corn, crunchy lettuce, smokey pork, and topped with a tangy dressing. It’s kind of like a deconstructed pulled pork sandwich but is low-carb, gluten-free and packed with healthy produce. And it only takes a few minutes to assemble!

Pulled Pork Salad Ingredients

  • Pork: Alright, you’ve got options here! For your main ingredient, you can either whip up homemade pork in your crockpot OR (my personal favorite) is to grab a pound of our favorite pulled pork in Charlotte. Grabbing restaurant pork feels like SUCH a treat for this recipe and really takes it to a new level. So if there’s a bbq place nearby you love, order some takeout pulled pork!
  • Lettuce: Chopped romaine is perfect for this salad and can tolerate all of the ingredients without getting soggy.
  • Corn: This is FRESH corn, not canned. And YES, it makes a difference! Just boil your ears of corn until the kernels turn bright yellow and are crisp tender (about 4 to 5 minutes). Don’t skip this step!
  • Carrots: Buy ’em pre-shredded to save a few steps.
  • Avocado
  • Tomato: I prefer grape tomatoes because they are sweet, crunchy, and aren’t too juicy.
  • Cucumber: I like an English cucumber because it is sweeter, less juicy, and has smaller seeds than your regular, common cucumber. If using a regular cucumber, make sure to peel it and de-seed it.
  • Black Beans: Use your favorite from a can!
  • Cheese: I love a thick-cut, shredded cheddar blend for this salad.
  • Salad Dressing: You can make your own green goddess dressing for this salad or you can purchase your favorite store-bought version. We really love the Primal Kitchen Green Goddess Dressing (you can find it at Walmart, Target, Amazon)

Ingredients

  • 1 head romaine lettuce, washed and chopped into bite-size pieces
  • 1.5 cups pulled pork, chopped
  • 3/4 cup black beans, drained and rinsed
  • 1 cup carrots, shredded
  • 1/2 cup shredded cheddar cheese
  • 1/2 avocado, diced
  • 3/4 cup corn
  • 1/2 cup grape tomatoes, diced
  • 3/4 cup cucumber, diced
  • Green Goddess Dressing

Instructions

  1. In a large bowl, place the lettuce.
  2. Top with remaining ingredients.
  3. Drizzle with dressing and serve immediately.
