1 28 oz can crushed tomatoes
1 28 oz can diced tomatoes
1 tbsp crushed garlic
1 14 oz can chicken broth {or 2 cups}
2 Tbsp sugar
⅓ cup butter
1 cup heavy cream
15-20 Basil leaves, chopped
Instructions
In a large pot combine the tomatoes, broth and garlic. Bring to a boil and let boil for 10 minutes. Reduce the heat to low and stir in the sugar and butter and mix until they are dissolved, melted and well combined. Very slowly (!!!!!) pour in the heavy cream while simultaneously stirring until all the cream is combined and the soup is creamy. Stir in the basil. Serve with freshly grated Parmesan cheese!
I was just thinking yesterday that probably 75% of the soups I have ever made have come from your blog, lol! This looks like another winner! Love me some tomato soup!!
Yum! I will have to try this soon! I also really want to try your baked potato soup, that sounds delicious! If you ever have just a teeny bit more time (still like 30 minutes total though 🙂 and want a tomato soup that is amazingly rich w/o any heavy cream in the ingredients – so super healthy! – this is my absolute favorite – http://www.nourish-and-fete.com/2016/10/roasted-tomato-basil-soup/
