Creamy Tomato Basil Soup

SURPRISE — another soup! No, no, no. I meant…SURPRISE! Another amazing soup!
The other night I had a craving for tomato soup. And not the kind in a can. I really wanted a bowl from Panera but also didn’t feel like getting out of my pajamas to go get it…with two kids. So instead I did a quick Pinterest search, put a call in to the hubs for a grocery pick up and within 15 minutes of him arriving home we had the most amazing tomato soup…for the next few days! I didn’t invent it — just copied it from a Pinterest recipe and had to re-share!  

Creamy Tomato Basil Soup

Ingredients

1 28 oz can crushed tomatoes
1 28 oz can diced tomatoes
1 tbsp crushed garlic
1 14 oz can chicken broth {or 2 cups}
2 Tbsp sugar
⅓ cup butter
1 cup heavy cream
15-20 Basil leaves, chopped

Instructions

In a large pot combine the tomatoes, broth and garlic. Bring to a boil and let boil for 10 minutes. Reduce the heat to low and stir in the sugar and butter and mix until they are dissolved, melted and well combined. Very slowly (!!!!!) pour in the heavy cream while simultaneously stirring until all the cream is combined and the soup is creamy. Stir in the basil. Serve with freshly grated Parmesan cheese!
