Raise your hand if you love sprinkles!
I love sprinkles. Like, I really love sprinkles. They are colorful, happy, fun and sweet, which is why they belong at every celebration. And lately it seems like we’ve had a lot of reasons to celebrate {new house, anniversary, birthdays and more} so I’ve been stockpiling jars of sprinkles {and bottles of champagne}.
Recently I decided to make funfetti cupcakes from scratch instead of using a box mix. Honestly, there wasn’t that much difference in taste {in my opinion} so I will likely go back to the convenience of a box. Not to mention, the wow factor for me is all in the frosting! So for this recipe, I made my vanilla buttercream frosting, also from scratch.
Homemade Funfetti Cupcakes
From how sweet it is
1/2 cup butter
1 cup sugar
2 whole eggs
1 tablespoon vanilla extract
1 1/2 cups flour
1 teaspoon baking powder
1/3 cup milk
1/3 cup assorted brightly colored sprinkles + more for top of frosting
Preheat oven to 350 degrees F.
Cream butter and sugar in the bowl of an electric mixer until fluffy, about 3 minutes. Add eggs and vanilla and beat until combined.
Combine dry ingredients in a bowl. Add half of the dry ingredients, mixing until just combined. Add the milk. Once mixed, add remaining dry ingredients. Fold in assorted sprinkles.
Pour into cupcake tins and fill 2/3 of the way full. Bake for 18-20 minutes. Let cool, then frost.
Yields 12 cupcakes
Whipped Vanilla Buttercream
From Carolina Charm
1½ cups (3 sticks) unsalted butter, at room temperature
1 lb confectioners’ sugar, sifted
3 tbsp. heavy cream
1 ½ tbsp. vanilla extract
Pinch of salt
In a large bowl, whip the butter with an electric mixer on medium-high speed until smooth (about 1 minute). One cup at a time, add in the confectioners’ sugar and mix on medium-low speed until incorporated. Add the salt. Continue to beat on medium-high speed until smooth (about 1-2 minutes). Mix in the heavy cream and vanilla on low speed until well blended. Increase the mixer speed and whip on high speed until light and fluffy, scraping down the bowl as needed (about 4-5 minutes).
Yields 2 dozen cupcakes
I should also give credit to the hubs for adding the sprinkles to the cupcakes, and to Charlie for eating all the extras off the floor.

If I wanted to double the recipe and make two cakes instead of cupcakes, how long should I bake it for if I'm baking both at once?
