Crispy Shrimp Tacos with Red Cabbage Slaw
These tacos are the perfect combination of crispy shrimp topped with a flavorful crunchy slaw. And they only take a few minutes to pull together.
Ingredients
Red Cabbage Slaw
- 4 ounces red cabbage, shredded
- 4 ounces carrot, shredded
- 2 TBSP mayonnaise
- 1 TBSP white wine vinegar
- 1 tsp blackening spice
- 1/2 lime, juiced
- 1 tsp sugar
For the Shrimp
- 1 TBSP cornstarch
- 1 tsp blackening spice
- salt & pepper, to taste
Additional Ingredients
- 6 flour or corn tortillas
- 2 tsp olive oil
- 1 TBSP cilantro, chopped
Instructions
- Make the cabbage slaw. Toss cabbage, carrots, mayonnaise, white wine vinegar, blackening spice, lime juice, and sugar in a medium bowl. Season with salt and pepper. Stir well.
- In another medium bowl, toss shrimp with cornstarch and blackening spice. Season with salt and pepper.
- In a large skillet, heat a large drizzle of oil over high heat. Add shrimp and cook until opaque in the center and golden on the outside, about 2 minutes per side.
- Wrap tortillas in a damp paper towel and microwave on high 30 seconds.
- Fill each tortilla with slaw, shrimp, cilantro and any desired toppings. Drizzle with lime juice.
