This Loaded Baked Potato Dip is everything you love about a loaded baked potato, but in dip form – served up on a chip! I’ve been making this dip since 2014, and I’m so excited to re-share it from the archives (with updated photos). It’s creamy, cheesy, and packed with crispy bacon, green onions, and all the classic flavors that make loaded baked potatoes so irresistible.
This dip is perfect for any occasion, from game days and BBQs to pool parties, showers, and even holiday gatherings. It’s super easy to throw together, can be made ahead of time, and always disappears in minutes.

Loaded Baked Potato Ingredients & Tips
One of the reasons I love this dip so much is that you can prepare it ahead of time and bake it just before guests arrive. It also sits out nicely – even outside in the heat!
- Instant Potato Flakes: These are the key to getting that creamy, potato-like texture without cooking potatoes! You can also use prepared mashed potatoes (like Bob Evans) if you prefer.
- Milk: You can use full-fat or low fat milk depending on your preference.
- Sour Cream: You can use regular or light sour cream.
- Chive & Onion Cream Cheese Spread: This gives the dip its savory flavor. If you’re not a fan of the chive & onion variety, you can swap it for plain cream cheese, but you’ll miss out on that extra flavor boost!
- Green Onions: A must for adding a fresh, oniony kick. Feel free to use extra if you want a more intense flavor! Remember to save some extra for garnishing your dip too.
- Shredded Sharp Cheddar Cheese: The sharp cheddar adds richness and depth, but feel free to use mild cheddar or even pepper jack for some heat if you prefer!
- Bacon: Make sure to get it extra crispy and crumble it into fine pieces.
- Ritz Toasted Chips Original or Wheat Thins: These are perfect for dipping as they are sturdy enough to handle the thick dip and have the right amount of saltiness. You can serve with fresh veggies like carrots, celery, or cucumber for a lighter option, but chips really are the best!

Loaded Baked Potato Dip
Ingredients
- 1/2 cup instant potato flakes
- 1/2 cup milk
- 1 cup sour cream
- 1/2 cup chive & onion cream cheese
- 2 green onions, finely sliced (divided)
- 1 cup sharp cheddar cheese, shredded
- 10 strips bacon, cooked and finely chopped (divided)
- Toasted Chips Original (or your favorite salty chip or cracker)
Instructions
- Preheat oven to 350ºF.
- In a large bowl, mix the potato flakes and milk. Let the mixture sit for 5 minutes, allowing the milk to absorb into the flakes.
- Add the sour cream, cream cheese spread, half of the cooked bacon, and half of the sliced green onions to the bowl. Stir everything together until well combined.
- Transfer the mixture to a baking dish and spread it out evenly.
- Sprinkle the shredded cheddar cheese and remaining bacon on top.
- Bake for 15-20 minutes, or until the cheese is melted and the dip is heated through.
- Remove from the oven and sprinkle the remaining green onions on top.
- Serve with chips, crackers, or your favorite salty dippers!
Notes
This dip can be prepared up to 1 day in advance—just store it covered in the fridge and bake it when you’re ready to serve. It holds up well even in the heat, making it perfect for outdoor gatherings. Leftovers can be stored in an airtight container in the fridge for a few days.
