Summertime Caprese Salad

I am clinging to all things summer for as long as possible. We have been having so much fun in our backyard on the weekends and Matt and I have been hosting little date nights on the porch after the kiddos go to bed. Last weekend we grilled steaks and broccolini for dinner, but the summery appetizer is what stole the show for me – caprese salad!

This app wins for a variety of reasons. It requires 4 ingredients, takes about 6 minutes to throw together and it’s delicious! In fact, we made this twice over the weekend!

 

Caprese Salad: On a plate alternate sliced tomatoes, thick sliced mozzarella cheese and basil leaves. Drizzle with balsalmic glaze. Enjoy! 

 

*If you don’t have balsalmic glaze on hand you can create a balsalmic reduction instead. Although I prefer the glaze because it keeps the recipe quick and I like that it’s a bit thicker.

I've recently added toasted pine nuts to our caprese. Talk about a whole new level. So yummy.
