Happy Friday!
It’s been one of those long, weird weeks—lots of time off school for the kids (including a fun snow day!). While a little extra time at home can be fun, I’m definitely looking forward to warmer weather and a full school week soon. Let’s dive into this week’s 5 and catch up on all the good stuff!

1. Valentine’s Day Recap
We had a fun little Valentine’s Day this year! The kids woke up to burnt pancakes piled high with whipped cream and sprinkles, along with a note directing them to the freezer for a bag of their fave Tru Fru Pina Colada treats—big hit.
Matt surprised us with gorgeous flowers from my favorite florist in town, along with sweet cards and a few small gifts.
And don’t worry—I had him covered too! For lunch, I surprised him with his favorite sushi and packed in a few extra fun snacks I knew he’d love. Then, when he got into his car, I set up a cheeky little scavenger hunt: a ribbon dangled from his visor, and when he pulled it, a photo collage strung together with ribbon dropped down, along with a note telling him to check his glove compartment where I’d hidden more treats and a card. He absolutely loved it!
2. Gallentines Mahj
Later on Valentine’s Day, I hosted a Gallentine Mahjong happy hour with some girlfriends! It was SO fun and festive. I decked out the room in Valentine’s decor and whipped up the cutest cocktails with a lips design on top! While the powder I used didn’t have a taste, it had a strong smell, so we only had one of those before moving on to our usual chai martinis! What started as a happy hour quickly turned into hosting everyone’s full family over and it was such a fun evening!
3. Mexican Stuffed Sweet Potato Meal Prepped Lunches
Meal prep has been a lifesaver lately—and I’m totally here for it! This is our third week of prepped meals in a row, and even though Sundays take a bit more effort, it’s SO nice to just grab lunch and snacks straight from the fridge every day. No stress about what to make, and no extra cooking or clean-up required throughout the week!
This week, I made Mexican stuffed sweet potatoes. I roasted sweet potatoes until they were perfectly soft, then topped them with seasoned ground turkey simmered in bone broth for that extra protein boost, and a generous mix of onion, tomato, and cilantro. And I added a side of avocado crema to tie it all together. Delicious!
4. Dilly Chopped Salad with Salt & Vinegar Chippies
I test out a new dinner recipe this week—Dilly Chopped Salads! I wasn’t sure if the kids would even touch it, but surprise, it was a HUGE hit with the whole family.
This salad is a blend of finely chopped romaine topped with hard salami, shredded parm, a few pistachios (which I’ll skip next time), and loads of fresh dill, all drizzled with an insanely delicious honey dijon vinaigrette and generously sprinkled with crunchy salt and vinegar chips. SO GOOD!
5. Moisturizing Fuzzy Sleep Socks
My heels get SO dry during the winter months and these moisturizing sleep socks are seriously that best. Not only do these work, they are super cozy too! I have NEVER thought to put potato chips on my salad but now I will - I know I will love the crunchiness AND saltiness of them :). Looks like a really sweet V-day for all of you for sure. Here's hoping for warmer days ahead!
