Creamy Coconut Margaritas!

Y’all, this cocktail is SO dang good. It’s light, refreshing, easy to make and dangerously delicious (so pace yourself)! I cannot recommend it enough for Cinco de Mayo, summertime happy hours or whipping up a pitcher for your next beach or pool day!

Recipe Tips

  • It’s more work, but FRESH squeezed lime juice makes a huge difference. I love a limey drink so I always go a little heavy on the citrus, but you can scale this back to an ounce if you prefer a more subtle lime flavor.
  • I use LIGHT coconut milk because the consistency is thinner. The thicker coconut milks tend to curdle…and no one likes curdled milk.
  • Rather than salting the entire rim of your drink, try salting just the side of your glass instead so you don’t get a mouth full of salt every time you take a sip. All you need to do is rub a lime down the side of your glass and gently roll it into your salt mixture OR shake a little of the mixture down the side of the glass (my preference so my salt plate doesn’t get clumpy).

Creamy Coconut Margarita

Y'all, this cocktail is SO dang good. It's light, refreshing, easy to make and dangerously delicious (so pace yourself)! I cannot recommend it enough for Cinco de Mayo, summertime happy hours or whipping up a pitcher for your next beach or pool day!

Ingredients

  • Kosher salt, grated lime zest and sugar for rimming the glass
  • lime wedge
  • 2 oz tequila
  • 1 oz cointreau
  • 1.5 oz light coconut milk
  • 1.5 oz fresh squeezed lime juice
  • 1/2 oz agave

Instructions

  1. On a small plate, combine equal parts salt, lime juice and sugar.
  2. On one side of a glass, rub a lime and dip into salt mixture.
  3. In a cocktail shaker filled with ice, add tequila, lime juice, coconut milk, cointreau and agave.
  4. Shake vigorously until shaker is chilled.
  5. Strain mixture over your salt rimmed glass filled with ice.
  6. Enjoy!

I'm not sure I want to drink a limey drink that's dangerously delicious. That just sounds like a disaster waiting to happen. But if you're looking for something fun and light, this cocktail is perfect! I made it and I share it with my friends there are Instagram followers in order to make it too!!!!!
