Five on Friday

Happy Friday, friends!

This week was a wild one—school was closed one day for wind (yes, really), but plot twist: it ended up being the most gorgeous, sunny day.

Other highlights this week include the spring season of flag football kicking off for the kids, a fun double date (more on that in a sec), a great Community Group night hosted by Laura, and winning my first tennis match of the season!

This weekend, Caroline and I have a full day of rehearsal on Saturday (I’ll be backstage making sure everything runs smoothly!). She has basically been living at school every night for Into The Woods rehearsals and I’m excited to see the dress rehearsal tomorrow! Meanwhile, Thomas has a super cool birthday party at Beat the Bomb, and then we’re all heading over to our friends’ house to hang out.

Oh, and I am so ready to spring forward with Daylight Savings Time! Bring on the longer days!

Let’s get down to the 5!

1. About Last Weekend…

Last weekend was one for the memory books! Matt and Caroline went to the Daddy-Daughter Dance—likely their last one—which made it extra special. This has been such a sweet tradition for them over the years, and they soaked up every minute. After the dance, Caroline brought home a crew of girls for a sleepover, so our house was very lively Saturday night.

Meanwhile, Thomas and I had our own little mama-son date! We went out for hibachi with two of his best buddies and their moms, and it was such a fun night. The boys were very entertained with the food tosses and onion volcano, and watching them crack up at all the chef’s tricks was the best.

2. Lunch Meal Prep: Buffalo Chicken Stuffed Sweet Potatoes

This lunch was the highlight of my week. On Sunday, I meal-prepped another longtime fave—buffalo chicken stuffed sweet potatoes—and let me tell you, I was excited for lunch every single day. These are hands down my favorite meal prep lunches lately, and while Matt still ranks the Big Mac bowls as his #1, this one is a close second!

And the best part? It’s ridiculously easy. Just toss your chicken in the crockpot with buffalo sauce on Sunday morning, let it slow cook for a few hours, then bake your sweet potatoes, slice them open, and stuff them with that juicy, shredded buffalo chicken (pro tip: don’t skip adding the extra juices from the crockpot back in!). Load it up with green onions, add a side of ranch, and boom—lunch for the whole week. 10/10 recommend!

3. Note to Self: More Double Dates

As I mentioned, Matt and I spent our weekly date night grabbing dinner with some of our really good friends, and it reminded me just how underrated double dates are. When it’s just the two of us, we tend to default to talking about kid schedules, house projects, and everything going on at work. But throw another couple into the mix, and suddenly we’re swapping funny stories, reminiscing about old vacations, and actually having conversations that have nothing to do with who’s picking up the kids from practice. It brings such a different energy to date night!

I’ve shared this one before, but after doing a little sports equipment clean-up in the garage last weekend, I had to mention it again! This storage system is seriously the best for keeping all the balls, bats, and random gear in one place instead of scattered everywhere. I squeezed out every last drop of my favorite face cream before refilling it for the 5th time this week!
