Sausage Sheet Pan Dinner Ingredients
This recipe requires only a handful of basic ingredients and is highly customizable. You can use any vegetables you like, but keep in mind that root veggies take longer to roast so you will need to adjust your cook time.
- Sausage: Apple chicken sausage is a delicious sweet option for this dinner, but use your favorite variety of Italian sausage (hot, sweet, or mild), kielbasa, andouille, chorizo, bratwurst or turkey! Don’t add any seasoning to the sausage — it’s already seasoned.
- Potatoes: You can use a variety of potatoes — sweet, baby red, colorful medley, fingerlings, etc. I prefer petite, bite-size honey gold potatoes. Just make sure to dice all your potatoes the same size. The smaller the potato, the more likely it will be perfectly crispy and evenly cooked by the time the other ingredients are done. You don’t need to peel the potatoes unless you want to.
- Carrots: Any style cut — baby, julienne, stick.
- Apples: Red or green. I love the tartness of a Granny Smith apple, especially paired with the other flavors on the pan.
- Brussels Sprouts: To save time, you can buy your brussels sprouts already washed and halved. Broccoli or cauliflower are also delicious veggie options.
- Extra Virgin Olive Oil: Use a high-quality olive oil for this recipe. My favorite is Kosterina EVOO.

I recommend using a full size sheet pan so you can evenly space the ingredients apart in a single layer. This will ensure everything roasts evenly at the same time. If needed, use two smaller pans! If the ingredients get crowded they will steam rather than roast. You want roasted, slightly crunchy!

Ingredients
- 6-8 chicken apple sausages
- 24 oz baby potatoes, diced
- 1 cup baby carrots
- 16 oz brussels sprouts, trimmed and halved
- 2 granny smith apples, cored and diced
- 1/4 cup olive oil
- 4 tbsp pure maple syrup
- 1.5 tsp garlic powder
- 1.5 tsp onion powder
- 1/4 tsp paprika
- 1/4 tsp rosemary
- salt & pepper
Instructions
- Preheat oven to 400 degrees. Generously drizzle your sheet pan with olive oil.
- Add sausage, potatoes, carrots, apples, and brussels sprouts. Drizzle everything except the sausage with olive oil.
- Sprinkle potatoes with paprika, rosemary, salt, and pepper. Sprinkle garlic powder, onion powder, salt, and pepper over the carrots and brussels sprouts.
- Pour the maple syrup over all the ingredients, except the sausage.
- Roast for 40 minutes, tossing the veggies halfway.

I've never thought to make this meal in "rows" - I just always throw everything together. And the addition of Brussel sprouts is a great idea! We use onions instead of apples - my husband does NOT like fruit with his meat - ha! I have started putting the sausage in 1/2-way through cooking - it was getting burnt and/or dried out when I put it in with the carrots, potatoes, and onions. Thanks for sharing!
