1 pound asparagus, cut in pieces
2 teaspoons extra-virgin olive oil
1 1/2 cups red bell pepper, sliced
1/2 teaspoon minced fresh garlic
2 tablespoons balsamic vinegar
1/2 teaspoon black pepper
1. Cook asparagus in boiling water 2 minutes or until crisp-tender. Drain. 2. In a small dish, combine olive oil, peppers, vinegar and garlic. 3. Bake at 350 degrees for 20 minutes. 4. Sprinkle with black pepper and serve.
