Five on Friday!

Happy Friday! My sister is coming this weekend! My sister is coming this weekend! Yay!

- ONE - Valentine's Day is right around the corner and is one of my favorite little holidays! Matt and I keep this holiday pretty simple and usually exchange very small {less than $20} gifts. I've already picked up a little surprise for him but wanted to revisit some of the stocking stuffer ideas I posted back at Christmas since these items are inexpensive and Matt really loved all of them!

- TWO - I wasn't a sweet tea drinker until I moved to Charlotte and met Matt. He loves sweet tea so when Southern Breeze Sweet Tea contacted me about trying their sugar free, zero calorie tea I immediately said yes! What makes this tea different is that it doesn't require any additional sugar outside of the tea bag! No sugar is needed because the Splenda Brand sweetener sweetens your tea while the tea bags steeps! Anyway, I was skeptical at first because I didn't know how great "sweet" tea would actually taste without 3 cups of sugar added in but both Matt and I were thoroughly impressed and have since gone through several pitchers. - THREE - Last week I had a "skin check" done at the dermatologist and my doctor removed two areas of "concern". Well, those biopsy results came back as "moderate to severe" on the pre-cancerous melanoma scale so I'll have to have minor outpatient "surgery" ASAP to remove a larger portion of the area. Anyway, all this to say -- protect your skin, ladies!! Growing up in Florida, I lived in the sun year round and now I am paying for it. This isn't my first time I've preached skin care either. - FOUR - Is this not the greatest little kitchen towel?! My friend Laura gave it to me and I love it!
- FIVE -We eat a lot of eggs in our house...and I mean a lot! I have an egg sandwich every morning for breakfast and at least once a week I'll cook breakfast for dinner too. Anyway, I am always looking for new ways to cook my eggs and since I am trying to be good about limiting over-easy eggs, I've been cooking a lot of scrambled eggs. I love this video from Southern Living below on cooking egg-cellent scrambled eggs. 
 
A few other tricks I've learned recently include:
  • Use a mixer to really scramble the eggs well
  • Add a little cream while the eggs are mixing
  • Cook over low heat.
  • Don't stop stirring once the eggs hit the pan.
  • Use a spatula and not a whisk.
  • Add way more butter than you think you need.

  5. I am expecting this July as well and scrambled eggs are my #1 craving! So yummy!...on another note, just yesterday I had a moderate to severe lesion taken off my arm as well. I actually work at a dermatological surgery center and skin care is so important! Thank you for the reminder :) Have a great weekend!

  6. Okay, so I'm a southern girl born and raised and I've never been able to find a low calorie sweet tea. So I'm going to have to go Southern Breeze a try! My friend, whose's a red head is also having issues with skin cancerous spots... I'll be keeping you in my prayers! Oh, that towel is too cute!

  8. I have to be super careful about my skin since I am so fair (and made the mistake of doing tanning beds in high school - WHY did anyone ever do that?) Hopefully they will get anything concerning off of you and all will be well after that! Loving that tea towel - the saying is too cute! Have a wonderful weekend!:)

  11. We have been eating a ton of scrambled eggs and I am so surprised how much I enjoy the liquid egg whites {shake them up good} and add a piece of american cheese to the mix once they have cooked a little. I don't even have to add butter, as long as I cook them really low. and YUM- that tea!!

  14. Sorry to hear about your scare!! I had skin cancer this past summer (at 32) and was kicking my younger self for worshiping the sun! Can't wait to try that tea - it sounds delicious!

  15. I've had the same issues with my skin & having things removed. UGH! I'm so mad at myself for those times in my 20's when I was in the tanning bed all of the time! I want to try that tea!

  18. Quiches are great ways to cook eggs. They aren't always fast, but they're relatively easy and you can do a lot with them! And you can make them pretty healthy and low-fat, too, with Egg Beaters, turkey bacon/sausage, spinach, etc.

  22. GREAT tip on the "sweet" (but no calorie) tea!!
    Also - thinking of you and sending prayers your way for the upcoming derm-surgery. I know it will go just fine. My mom has had a few surgeries for melanoma as well, and I've had a few VERY minor "pre-cancerous" moles removed. So I hear ya about sunscreen!
    And YES to eggs! I usually cook them at least once for us on the weekends. I just started using butter in my eggs about a year ago. WOW, had I been missing out! Just this morning, I fixed eggs (with cheese - duh) and bacon for breakfast, and I was saying how I can't wait to have them super soft scrambled instead of fully cooked.....5 more weeks 'til le bebe arrives, and I can have them!!! WHOOPEE!
